Recipe: Simple Creamer Potatoes

Here is a fast and simple side dish for any weeknight meal. Take several handfuls of the tiny Florida new red potatoes, often called creamer potatoes. Spread potatoes evenly into a 9 x 9 glass baking dish. There's no need to peel these potatoes; they are even more delicious with the skin on!

Slice or sliver white onions directly over the top of the potatoes. Add several pats of butter and salt and pepper to taste. Add in fresh snap beans for another favorite flavor (optional). Pop the baking dish into the microwave and cook on high for five minutes. Check for doneness with a fork and cook in one minute increments until desired texture is reached.

Serve with pork chops, chicken breasts, or even hamburgers for an alternative to boring potato salad or time-intensive mashed potatoes.
